Harvested in 500 kg bins, grapes pressed with the feet to avoid semi-carbonic maceration, short maceration of 5 days for a sort of infusion without pumping over. Then follows 7 months between cement and large Austrian tonneaux. Racking before bottling, without additions.
Complex nose of Mediterranean scrub, with notes of licorice and coffee; soft and agile sip, light and persistent.
Land-based appetizers, stewed or grilled white meats, medium-aged cheeses.
