Organic
Harvest between the end of September and the beginning of October, with manual harvesting of the grapes. Destemming and fermentation of the crushed grapes at a controlled temperature at 28/30°C for 10 days, with delestage and pumping over. Subsequent pressing, racking, and maturation in steel and concrete.
Intense ruby red color. On the nose, clear hints of red fruit which are accompanied by the characteristic herbaceous and spicy notes of the two Cabernets. The sip is enveloping and intense, full-bodied, with a long and persistent finish of fruit, liquorice and spices.
Roasted meats, cured meats, medium-aged cheeses.
