Description

Destemming after cooling to 8⁰C in a cell, short maceration on the skins, soft pressing and fermentation at a controlled temperature with indigenous yeasts. Aged in cement on the noble lees for 6 months.

Tasting

Bright golden yellow color; citrus and fruity nose with notes of flint and hydrocarbons; sip of excellent structure and elegance, savoury, fresh and persistent.

Pairings

Seafood first courses, crustaceans and molluscs, grilled fish, white meat.
