Manual harvesting from the end of August; after soft pressing of the grapes, the must bloom ferments in steel, also carrying out malolactic fermentation; re-fermentation in the bottle on the lees lasts at least 24 months; no dosage at disgorging.
Brilliant straw yellow colour, fine and persistent perlage; fresh and complex nose of aromatic herbs, white flowers and yeast; good freshness and tanginess on the palate, mineral and persistent.
