Description

After careful manual harvesting in boxes, the grapes undergo soft pressing and remain in contact with the skins for 4 hours. The must then ferments in steel at a controlled temperature. In spring the base wine is bottled and left on the yeasts for at least 8 years. The bottles are finally disgorged and filled with wine of the same vintage, without the addition of sugar. The Classic Method thus obtained rests in the bottle for a few months before being released on the market.

Tasting

Copper colour, onion skin, fine and persistent perlage. Nose of ripe fruit, with hints of dried fruit and spices; dry, full and persistent sip.
