Manual harvest between late August and early September with double sorting, both in the vineyard and in the cellar; white vinification with fermentation at a controlled temperature of 15/18°C; secondary fermentation using the long Charmat method at low temperature, lasting approximately 120 days; bottle aging for at least one month before release.

Bright straw yellow in color, with a fine, persistent perlage; a rich, fragrant nose of white flowers, pear, and golden delicious apple, with fresh, citrusy notes of bergamot and pink grapefruit; a minerally, savory palate, well-balanced and structured, with a long finish of lemon and aromatic herbs.

Aperitif, land and sea appetizers, grilled fish, shellfish, vegetarian dishes, medium-aged cheeses.
