Manual harvest with selection in the vineyard and sorting in the cellar; white vinification with fermentation at a controlled temperature of 15/18°C; secondary fermentation using the long Charmat method at low temperature, lasting approximately 120 days; aged in bottle for at least one month before release.
Straw yellow in color with golden-green highlights, fine and persistent perlage; fresh and fragrant nose of bergamot, medlar, and peach, with notes of mulberry, acacia blossom, and aromatic herbs; minerally and balanced on the palate, vertical and balanced, with a long, very fresh finish of lime and ginger.
Aperitif, land and sea appetizers, shellfish, cured meats, medium-aged cheeses.
