Lambrusco di Sorbara
Free-run must, soft pressing, without maceration, alcoholic fermentation, natural refermentation in bottles on native yeasts, refinement in bottle. Single bottling at the beginning of March.
Salmon pink color with very fine and persistent perlage, slightly cloudy due to the presence of the refermentation residue (bottom). The nose is citrusy, with notes reminiscent of grapefruit, wild strawberry, floral hints of wild rose. Fresh with marked acidity that recalls pomegranate and green apple peel. Great flavor, balance and persistence.
Aperitif, fried fish, fried vegetables, tuna, salmon, cured meats and cheeses.
