Description

From a grassy, non-irrigated vineyard. Meticulous grape selection is followed by destemming, then fermentation for about 18 days at a controlled temperature of 26/27°C, with frequent pumping over. Matured in oak barrels.

Tasting

Very intense, almost impenetrable ruby red colour. On the nose, initially fruity hints of wild blackberry, morello cherry, raspberry and blackcurrant, which are interspersed with spicy tertiary nuances and light notes of roasting and tobacco. Firm on the palate, with soft, round tannins against a slightly bitter background. The structure is that of an important wine, full-bodied and with good aromatic persistence.

Pairings

It goes best with meat dishes of traditional Friulian cuisine. For example, it goes well with cotechino (pork sausage), musetto con la brovada (pork sausage with brovada sauce), pork ribs, and baked pork knuckle. It is also excellent with game dishes.
