Late manual harvest with selection in the vineyard; the grapes are destemmed and left to macerate with the skins for thirty days, with repeated punching; fermentation occurs spontaneously thanks to the action of the yeasts present on the skins; the wine matures in new and used tonneaux for 36 months.
Intense ruby red color with violet reflections; fruity nose with hints of berries, chocolate, leather and spices; full and full-bodied sip, with light tannins and nice acidity.
Stewed red meats, braised meats, game, mature cheeses.
