Riesling Italico Collio DOC 2017

Manual harvest in boxes in October. Spontaneous fermentation in contact with the skins in open 22Hl vats, without temperature control, selected yeasts, enzymes or clarifications. This is followed by decantation for a month in stainless steel tanks, then in 12Hl oak barrels for at least a year. Refines in glass for approximately 5 months.

Intense amber yellow color. The olfactory bouquet is complex with notes of ripe citrus fruits, hazelnuts, amaretto and minerals. On the palate it corresponds with intense hints of apple, mandarin, gentian, chalk, dried apricot and slightly savory hints.

Excellent with fish dishes, white meats, mature cheeses.
