40% Chardonnay, 30% Incrocio Manzoni, 20% Pinot Bianco, 5% Sauvignon, 5% Riesling
Harvest: August/September. Maceration: 12 hours in contact with the skins and subsequent soft pressing. Fermentation and refinement: partly in Allier barriques, partly in steel tanks. Malolactic fermentation: carried out. Bottle refinement: 12 months. Serving temperature: 12 – 14 °C.
Golden yellow in colour, the nose features hints of white wild flowers and yellow pulp fruit, with a woody note, given by the barrel aging. In the mouth flowers and fruit; here the fruit appears riper, caressed by a light citrus note. With aging all its characteristics become finer and more ethereal, also leaving room for pleasant delicate oxidative and hydrocarbon notes.
Excellent paired with first courses based on fresh fish. Dare to have walnut toast with cream cheese and orange blossom honey.
