Organic|Biodynamic
From calcareous soils, 18-22% silt, rich in minerals (porphyry, quartz, basalt, slate), very rich in skeleton, with east, south-east exposure at 320 meters above sea level, and from vines planted in 1990. Harvest and selection of the grapes by hand from the second half of September until mid-October, depending on the vintage. Spontaneous fermentation with native yeasts, no use of fermentation aids. No sulfur dioxide is used on the grapes or in the must. Malolactic fermentation is not controlled, it is normally carried out completely. Aging in wood in the presence of the noble lees, from 12 to 18 months, then in the bottle for at least 6 months.
