Manual harvesting in boxes, soft pressing, cold maceration of the whole grapes, fermentation in a thermo-conditioned tank. Maturation for 10 months in stainless steel tanks for 50% and in second passage barriques for the remaining 50%. Bottle aging on yeasts for 40 months.
Fine and persistent perlage; on the nose notes of wild berries and black cherry, with floral hints of rose; structured and balanced sip, with a persistent savory-acid texture.
First courses, fish, white meats, cheeses and cured meats.
