Description

Wine produced only in favorable years. The grapes, harvested by hand in 20 kg boxes with careful sorting, are destemmed and pressed. The must remains in contact with the skins for approximately 15 days; it is then drawn off and decanted into used wood of various sizes. The aging in wood lasts approximately 24 months, after which the wine is placed in concrete tanks and then bottled. The bottles rest lying down in the dark for at least another 6 months before being put on the market.

Tasting

Intense and bright ruby colour. Broad, varied nose, with hints of ripe berries, sour cherry, undergrowth, spices, liquorice and the typical balsamic note of the grapes grown in the Solinga valley. The sip is robust, with smooth tannins, full, rich, broad. Improves with aging.

Pairings

First courses with game sauces, sausage risotto, roast lamb, braised meats and stews, medium-aged cheeses.
