Manual harvest with bunch selection on a sorting table; after destemming and soft pressing, each batch of grapes is transferred to small fermentation tanks; maceration on the skins for 14-16 days is followed by malolactic fermentation and maturation for approximately 12 months in oval French oak barrels; aged in bottle.
Intense ruby red color; complex nose, with notes of menthol, undergrowth, morello cherry, rosemary, coffee, and spices; enveloping and elegant on the palate, fresh and savory, with well-present smooth tannins and good acidity; harmonious and persistent finish.
Grilled meats, aged or blue cheeses.
