Manual harvest at the end of September; soft crushing, cold static decantation, temperature-controlled fermentation; the tirage phase begins in February and the bottles remain on the lees for at least 30 months in the basement of the old cellar.
Pale pink colour with onion skin reflections, fine and persistent bubbles; fresh and aromatic nose of citrus peel; precise and elegant sip with raspberry notes and long persistence.
Starters, shellfish, beef tartare, grilled fish.
