Description

Harvest at the end of August, beginning of September. Crushing-destemming, maceration at a controlled temperature of 10°C for 12 hours, pressing, cold decantation for 12 hours; fermentation in steel at 18°C for approximately 15/18 days; aging in steel for 10/12 months.

Tasting

Straw yellow color with green reflections; intense and aromatic nose, harmonious, with citrus hints of grapefruit, elderflower, passion fruit, tomato leaf and mint. Fresh and balanced sip of sage, tropical fruits and citrus fruits, with mineral notes.

Aperitif, asparagus, vegetable soups, shellfish.
