100% Sauvignon
Manual harvest in boxes from three harvests in different periods, vinified separately and then assembled; destemming and natural cold maceration, soft pressing and decantation of the must at 10/11°C, alcoholic fermentation with selected yeasts at a controlled temperature of 18°C; cold stabilization at a temperature of 4/5°C for 5 days; the wine matures for 7 months in steel on the fine lees and refines in the bottle.
Pale straw yellow color tending towards golden; intense but never cloying nose, of tomato leaf, pepper, sage, mown grass, nettle, with hints of yellow fruit and tropical fruits; fresh and mineral on the palate, with a nice cleanliness and persistence.
Seafood appetizers, sushi and sashimi, shellfish, vegetarian dishes with peppers, asparagus risotto, cured meats and cheeses.
