Destemming and soft pressing. The must is cooled, decanted and fermented at a controlled temperature of 17°C. In December the clean wine is refermented in autoclaves after adding yeasts and sugar to bring the pressure to around 2 atmospheres.

Pale straw yellow color with greenish veins. Fresh aroma of white fruit, such as apple and pear. Slightly sweet on the palate with a fresh, acidic finish.

Aperitif, light land and sea starters, cured meats and cheeses.
