The drying of the grapes (hence the name “sforzato”) takes place in the drying room for 60-70 days. After which the dried grapes are vinified with maceration on the skins for 15-17 days in 130 hl stainless steel fermenters with automatic punchers. Three delestages at a controlled temperature of 29°C.
Intense ruby red, tending towards garnet; broad and varied bouquet with fruity and floral scents, but also notes of leather and tobacco, enveloping and deep; full-bodied, dry, austere. Wine with strong character and great structure.
Ideal companion for red meats, furred and feathered game, large aged cheeses.
