The grapes harvested in the first/second ten days of September are destemmed and pressed with soft pressing; the alcoholic fermentation takes place in stainless steel fermenters at a controlled temperature; the wine matures on the fine lees in steel tanks until May. The second fermentation is carried out with selected yeasts, disgorgement after 30 months and subsequent refinement in the bottle for two months before marketing.
Straw yellow color with golden reflections, fine and persistent perlage. Nose with evident hints of broom and citrus fruits; fresh sip with a marked flavor.
Seafood appetizers and first courses, grilled fish.
