Description

Harvest between the end of September and the beginning of October, with manual harvesting of the grapes. Destemming and fermentation of the crushed grapes at a controlled temperature at 28/30°C for 10 days, with delestage and pumping over. Subsequent pressing, racking and maturation in old large-capacity wooden barrels.

Tasting

Intense ruby red color. Marked aromas of plum and morello cherry are accompanied by the characteristic herbaceous and slightly spicy notes of Merlot. The sip is taut and juicy, with good structure, with an elegant and velvety texture.

Pairings

Grilled meats, braised meats, first courses with game sauces, cured meats and mature cheeses.
