Manual harvest during the first ten days of September; the grapes are destemmed and pressed, followed by fermentation which lasts about two weeks; it is then kept in concrete tanks until the second fermentation. Second fermentation in the bottle, with selected yeasts, according to the champenoise method, without racking, lasting approximately 60 days. It refines in the bottle for another 12 months before being put on the market.
Pale yellow colour. Compact foam. Subtly aromatic aromas that turn towards herbaceous with a yeasty background. The taste is dry with a light bittering and thirst-quenching note.
