It comes from basaltic-tuff structure soils rich in microelements, cultivated on steep terraces with simple pergolas. With manual harvesting towards the beginning of October, the grapes are destemmed and delicately pressed. The must is immediately cooled and fermented in steel, at a controlled temperature for 20 days. The wine matures in steel on the fine lees for approximately seven months, accompanied by constant batonnage.
Balance and flavor. Notes of aromatic herbs, white flowers and citrus fruits. Structured sip, with an important mineral note that refers to the volcanic matrix of the soil. Soft, with a long harmonious finish.
First courses, fish-based menus, risottos, vegetable soups, cheeses, eggs and asparagus.
