Manual harvest in boxes; direct pressing of the must. Fermentation with Native yeasts in stainless steel. One year of bottle aging in contact with yeasts. Three months of aging at sea inside a basket (lantern) called “Ostriga” patented by a local winery for oyster farming. The peculiarity of this refinement is the incessant natural fluctuation of the bottle with the yeasts inside. Degorgement immediately after repechage. Zero dosage.
Gold colour, pearlescent, fine and persistent bubble. The nose is intense and elegant, fruity notes of berry and morello cherry, vegetal hints (acacia flower), slightly citrus. In the mouth it is pleasant to drink, fresh, tasty, good acidity, enveloping and soft on the palate, long on the finish with an aromatic note reminiscent of orange peel.
Land and sea appetizers, crustaceans and molluscs, raw fish.
