Description

Manual harvesting with selection in the vineyard; brief pre-fermentation maceration of the destemmed grapes at a temperature of 12/14° C; fermentation for 15/20 days at a controlled temperature of 24/26° C, malolactic fermentation after separation of the wine from the skins; the wine matures for about 6 months in large barrels.

Tasting

Brilliant ruby red colour; nose of red fruits with spicy notes; structured mouthfeel with ripe tannins and great persistence.

Stewed red meat, typical Apulian cuisine.
