The choice of vineyards comes from a profound evaluation of the characteristics of the various terroirs for the production of sparkling wines, with particular reference to the geological origin, morphology and microclimatic conditions of the cultivation areas. Vineyard training for over 15 years using pergola, guyot and low spurred cordon. The soil is made up of deposits originating from the disintegration and alteration of prevalent subalkaline effusive volcanic rocks, quartz porphyries with a typical red-purple colour. The yield per hectare is approximately 5,500 litres. The harvest is carried out by hand after organoleptic tasting. Soft pressing of whole bunches at a temperature below 15°C, with a maximum must yield of 55% vol./weight. Maturation of the sparkling wine base in stainless steel. Aging sur lies for a minimum of 36 months.
