Harvest in the first half of September, with careful selection of the bunches; soft pressing of the grapes, traditional white vinification and fermentation at controlled temperature; maturation in steel for 7 months. Secondary fermentation according to the Metodo Classico, with maturation on the lees for 24 months.

Straw yellow in colour with fine, persistent perlage; mineral nose of bread crust and yellow fruit, with hints of almond and pastry; taut mouthfeel, with good acidity and sapidity, balanced by discreet dosage; long finish.

Aperitifs, seafood starters, shellfish, vegetarian first courses.
