100% Pinot Noir
Harvest in early September, soft pressing of the grapes with 50% yield in the press; traditional white vinification and fermentation at controlled temperature; maturation in stainless steel for 8 months. Foaming according to the Metodo Classico, with 42 months on the lees; disgorgement without dosage.
Intense straw colour with fine and persistent perlage; nose of great intensity and finesse, complex and elegant on the palate, with nice refreshing acidity.
Seafood starters, fried fish and vegetables, shellfish and seafood.
