Destemming of the grapes. Maceration at controlled temperature (24°C) in stainless steel vats for more than 7 days with frequent pumping over. After racking, the wine is aged for 18 months in steel tanks and barriques.

Elegant, complex, mineral, with subtle aromas of red fruit and wild raspberry. The acidity is very balanced with the structure. The tannicity is pleasantly integrated by a persistent aftertaste where pleasant and subtle notes of spices and leather predominate.

Grilled lamb chops, first courses with game sauces, stewed game, mature cheeses.
