BottlesManual harvest in boxes during the first half of October. Accurate sorting of the bunches. Maceration for at least 12 days without ever exceeding 25/28°C. Maturation for 36 months in steel and refinement for 6 months in the bottle.
Bright ruby red color tending towards garnet. Balsamic and spicy notes stand out on the nose, surrounded by black cherries and berries. The sip is large and enveloping and reflects the olfactory bouquet.
Roasts and medium-aged cheeses.
