Pinot Noir
Manual harvest starting from the third week of August with soft pressing of the fresh grapes and subsequent fermentation in small temperature-controlled stainless steel tanks. In late spring, the entire batch of wine from the relevant vineyard is bottled for long fermentation. After at least 200 months of maturation on its own yeasts, it is disgorged and refined for a further 6 months. Sold after at least 17 years.
Brilliant golden yellow color with elegant perlage; fresh sip with a brioche aftertaste and a fullness, flavor and complexity worthy of the greatest blanc de noir.
Great dishes of Mediterranean cuisine based on both fish and meat, long-matured cheeses.
