Soft pressing of the whole bunch and separation of the free-run must (must yield 55%). Controlled temperature fermentation in steel tanks. Draft in spring, left in the bottle on the yeasts for 40 months.
Golden yellow colour, fine and persistent perlage; on the nose bread crust and crunchy yellow fruit, strong aroma and lively minerality; clean sip, with bright acidity and creamy finish.
