Description

Vinification without skins, with vertical pressing. Spontaneous fermentation and maturation follow, 50% in cement and 50% in wood (225-liter oak barriques from Vosges, Gascony and Burgundy). Bottling in May following the harvest and minimum aging in bottle for 12 months.

Tasting

Nose of white flowers and fresh tree fruit, with spicy and mineral notes, of pepper and freshly cut wild grass; agile, fresh and savoury sip, with good tension and persistence.

Pairings

Seafood appetizers, molluscs, crustaceans, slightly mature cheeses.
