The grapes are pressed by foot (strictly by women) and only then partially destemmed by hand. They remain in contact with the skins in an open truncated cone-shaped vat for about three weeks, then mature for nine months in a used 350-liter barrel. Production is minimal, just a few hundred bottles per vintage.
A nose of blackberries, spices, and aromatic herbs. A plump yet elegant palate. A long finish.
