Manual harvest in the third ten days of September; fermentation in steel tanks at controlled temperatures; maturation for 18 months in steel and part in second passage wood; bottle aging for at least 12 months.
Intense ruby red colour; complex nose of morello cherry and black cherry, balsamic and sweet spice notes, mineral hints of graphite; rich and intense sip, with great structure and persistence.
Game, game, braised and stewed meats, mature cheeses.
