Description

Manual harvest at the beginning of September; soft pressing with dry ice to limit oxidation and bring all the aromas of the grapes into the final bottle. Filtration and secondary fermentation in an autoclave at a controlled temperature until reaching 5% alcohol. Subsequent arrest of the fermentation with the cold and maturation of the wine for 2 months with batonnage.

Tasting

Straw yellow color with thin and fine bubbles; fruity nose, of peach and apricot, with notes of white flowers and rose buds. Sweet but not cloying on the palate, with a good acidity that invites you to sip and refreshes it, making it very balanced.
