The grapes are dried using the Vicenza picaio method for 4-6 months, then pressed and left to vinify in French oak barrels in the attic of the ancient drying tower. The fermentation with Native yeasts and the refinement proceed for years, alternating. Fermentation resumes every year in spring and autumn when temperatures are mild, while it stops and leaves room for refinement in the months with the coldest temperatures in summer and winter. Winemaking can last from 8 to 12 years.
Vin de Granaro is a balsamic passito wine. The aroma is very rich and complex and combines dried fruit with walnut husk, sweet tobacco, coffee and cocoa and more balsamic notes of liquorice.
Dry pastries, alone as a meditation wine.
