Manual harvest at the end of October/beginning of November; direct pressing of whole bunches with natural static decantation of the must for 30 hours; fermentation with pied de cuve of Native yeasts for 16 days, maturation in steel for approximately 5 months with three rackings carried out. Bottle refinement. No added sulfur, decanting and bottling according to the phases of the moon.
Intense pink color; nose of berries, pomegranate and rose; soft sip, with beautiful freshness and flavor, supported by delicate tannins.
Starters, delicate first courses, seafood second courses, grilled white meats.
