Description

Manual harvest in the second ten days of October; pressing of the grapes, 30% of which with the stalks; maceration with the skins for no less than 15 days in a 2500 liter wooden vat; fermentation with pied de cuve of Native yeasts for 10 days, maturation in used 225 and 500 liter barrels for 12 months, with six rackings carried out. Bottle refinement. Racking and bottling according to the phases of the moon.
