Manual harvest in the second ten days of October; pressing of the grapes, 30% of which with the stalks; maceration with the skins for no less than 15 days in a wooden vat; spontaneous fermentation lasting approximately 12 days, maturation in used 225 and 500 liter barrels for 12/18 months, with five rackings carried out; aging for at least one year in the bottle. Racking and bottling according to the phases of the moon.
Deep ruby red colour; nose of ripe red fruits, flowers and spices; elegant, savory and velvety sip, with great persistence.
Grilled red meats, game, mature cheeses.
