Maceration lasts 20 days at a controlled temperature in stainless steel tanks. The wine ages for approximately 12 months in 250-liter terracotta jars and then ages for 8 months in bottle.
A nose with prominent cherry and spice notes, balsamic and cocoa notes; a structured palate with good acidity and flavor, soft tannins, and a long finish.
Stewed meats, braised meats, game, mature cheeses.
