Description

Champagne from the Mesnil-sur-Oger area, in biodynamic cultivation. It makes wine and carries out the first fermentation in steel at a controlled temperature. It does not carry out malolactic fermentation, it carries out the second fermentation with the addition of selected yeasts, resting for 42 months. Manual riddling “sur le pupitre” and disgorgement on volley. The low yields and great attention to quality offer the market a small production.

Tasting

Brilliant golden color, with a very fine perlage. Enveloping and intense nose, of fresh and candied cedar, on a floral and mineral background. Tense and vertical sip, dry, clear.
