Whole-cluster pneumatic pressing, with fermentation of the free-run must only at a controlled temperature in stainless steel; subsequent 6 months on the fine lees, without malolactic fermentation. The wine ages on the lees in bottle for 30 months, 24 of which are at 10 meters in the icy depths of the mountain lake at 1,930 meters above sea level. Constant temperature and pressure, much of the time in total darkness.
Bright straw yellow in color with golden highlights, a very fine and persistent perlage; a rich and elegant nose of apple, pear, and white flowers, with notes of bread crust and hazelnut, citrus, and saline hints; a fresh and clean palate, with good acidity and mineral balance, a great harmony between freshness and depth.
Raw fish and seafood, baked fish, shellfish, roasted white meats, and lightly aged cheeses.
