Ziik Rosè Extrabrut

Last week of August/first week of September. The Sangiovese grapes are harvested manually, according to a rigorous selection dictated by precise research and zoning of the areas most suited to sparkling wine production within the winery’s vineyard park. In the winery, soft pressing, cold static decantation of the must, fermentation in steel at a controlled temperature; secondary fermentation with the Charmat method for 4 months on the yeasts in an autoclave.

Delicate pink colour, fine and persistent perlage; fruity nose of blackcurrant and wild strawberry, with delicate floral aromas of rose; crunchy sip of small red fruits, savory, mineral, dry and persistent.

Aperitif, carpaccio and land and sea tartare, fresh cheeses.
