Manual harvest, destemmed grapes and half lightly macerated on the skins for two weeks. One punching down per day, spontaneous fermentation in steel and malolactic completed. Unfiltered and unclarified wine.
Aromatic nose of dried apricots, white flowers, black tea and walnuts; sunny and summery sip, perfect on a nice Georgian chicken soup.
Fish soups, roasted or grilled white meats, spicy vegetarian dishes, mature cheeses.
