Fermentation with long maceration on the skins, static decantation with racking, stabilization of the wine by microfiltration and cold tartaric. Refinement in steel and in bottles.

Purple-red colour, excellent consistency. The aromas, of notable intensity, persistence and finesse, are fruity, floral, spicy, broad, ethereal; forest fruits, violet, rose, walnut, tobacco, black pepper, vanilla, spices can be detected. The taste is dry, without concessions, warm, soft, savory, rightly tannic, full-bodied, intense and very persistent, very fine and harmonious.

Structured meat dishes, roasts, pecorino and mature cheeses.
