Description

Manual harvesting in the second half of September; the raisins are vinified in red wine with skin contact for the entire duration of the fermentation process; two daily pumpings over and a mid-fermentation delestage are carried out; the wine matures for 3 years in barriques and 2 years in 25hl oak barrels; it is aged for a long time in bottles before release.

Tasting

Intense garnet red colour; nose of jammy fruit, spices, cherries and sour cherries, with hints of withering and nuances of tobacco and cocoa. Great structure on the palate, complex, elegant and velvety.

Game and venison, stewed red meat, braised meats, mature cheeses.
