Corvina, Rondinella
Manual harvest with selection in the vineyard; separate vinification for each vine harvested at phenolic maturity. Fermentation at a controlled temperature of 26°C followed by a short maceration. Spontaneous malolactic fermentation. Blending of wines obtained from a single grape variety in compliance with the percentages indicated in the production specifications. Maturation for 15 months in steel tanks, refinement for 3 months in the bottle.
Good intensity ruby colour. Nose of cherry and berries, good persistence on the sip, soft and balanced.
Risottos, roasts, grilled meats, medium-aged cheeses, chestnuts, mushrooms.
